Hunan-style cuisine takes chili as main course with tastes of fertile, smoothness, fat and moistness It gathers salt of north, sweet of south and hot, sour flavors and is featured in savoriness, tenderness, lightness, crispness and hotness.

Hunan is place with developed culture and abundant talented people as an old saying that “Only Chu state has talents so it is prosperous”. In the history of China, a lot of patriots, thinkers, statesmen, strategists, scientists emerged from Hunan, such as Tan Sitong, one of the six gentlemen of Reform Movement of 1898; Huang Xing, Song Jiaoren and Cai E, leaders of Revolution of 1911; Mao Zedong, Liu Shaoqi, Ren Bishi and Peng Dehuai, founders of new China; Qi Baishi, painting master; and Yuan Longping, the 'Father of Hybrid Rice'. All of them are respected by the public.

Hunan is in the middle reaches of the Yangtze and in the south of Dongting Lake so is called “Hunan” and “Xiang” for short because Xiang River flows through the whole province. Xiang cuisine is gradually divided into two styles in the long process of development: one is Hunan traditional food featured in “hotness” with frying as main course and boiling as complement. The other one is feast course in Xiang style which develops from preserved style, Dai (Mingyang) style, Sheng (Shanqi) style, Xiao (Lusong) style by many masters and chefs in Changsha, Xiangtan and Hengyang, politic and cultural centre of Hunan.

Xiangjun Mansion Restaurant employs Shi Yinxiang, master of Xiang cuisine, as chief advisor, Ping Jian, master of Chinese cuisine, as executive chef. They make some innovation on the basis of the traditional features of Xiang cuisine and provide you Hunan traditional food, feast course in Xiang style and innovated dishes in local style.

Master Chef Shi Yinxiang (1917—), a native of Changsha
From 1950s to 1980s Mao Zedong, Liu Shaoqi, He Long, Jiang Zemin often came to Changsha for inspection. Shi Yinxiang was their chef and was highly praised for his authentic Xiang cuisine. In 1991, he was titles as “Master of Xiang Cuisine” by the provincial government of Hu'nan and at the same time became the first master of Xiang Cuisine.
